Chicken with Garlic Chives


Ingredients:
1 Boneless chicken leg meat
1 Bundle of Chinese chives (jiu cai or chinese leek/garlic)
3 Tbs of soy sauce
2 Tbs of cooking wine
1/2 Tsp of salt
1/2 Tsp of pepper


1. Slice the chicken into 2 inch strips

2. Cut off the stems of the Chinese chives and then cut the bundle in half

3. Stir fry they chicken add 3 tbs of soy sauce, 2 tbs of cooking wine, salt and pepper

4. When the chicken is fully cooked, add the Chinese chives and stir fry for 30 seconds, turn off the fire. Serve and enjoy! :)  I like my dish with a side of rice

Jalapeño Chicken Burger



Ingredients:
2 lbs of ground chicken
2 Eggs
2 Tbs of flour
2 Tbs of pepper
2 Tsp of salt
1 Cup of chopped red onions
1 Cup of chopped carrots
4-5 Sticks of cilantro
1 Jalapeño pepper

Hamburger buns
Sliced tomatoes 
Sliced red onions
Slices of cheese
Lettuce

1. Dice the cilantro
2. Remove the seeds from the Jalapeño pepper (be careful not to touch your face or eyes...it might sting)

3. Dice the Jalapeño pepper
4. In a large bowl, mix the 2 pounds of ground chicken, 1 cup of chopped red onions, 1 cup of chopped carrots, diced cilantro and diced Jalapeño pepper

5. Add 2 tbs of flour, 2 tbs of ground pepper, 2 tsp of salt and 2 eggs

6. Mix all the ingredients together with a spatula 

7. Turn on the grill (I'm using a Cuisinart Griddle/Panini Maker, you can also use a pan on the stove)
8. With a large serving spoon or your hand make a giant meatball and then flatten the ball (to the shape of a meat patty) and place on your grill or stove to cook.


9. Turn off the grill/stove once the patties are fully cook

10. Toast the hamburger buns
11. Build your burger, I like to add cheese, lettuce and tomatoes. or sometimes I add sliced red onions but no cheese, it depends on what you like.  Serve and enjoy!

Satay Chicken Noodle Soup



Ingredients:
3 Medium sized chicken breast
2 Servings of noodles
2 Cups of chicken broth
Cilantro
4-5 Napa cabbage leaves
3 Tbs of satay barbecue sauce 


1. Bring 1 pot of water to a boil, and cook noodles, when done drain and set aside

2. Cut chicken breasts into bite sized pieces
3. Chop the napa cabbage leaves into 1 cm strips
4. Marinate the chicken with 3 tbs of satay barbecue sauce

5. Stir fry the chicken when cooked set aside

6. Bring 2 cups of chicken broth to a boil and add the cooked noodles, cooked chicken and napa cabbage
7. Serve and Enjoy! I like to add some freshly chopped cilantro to my noodles soup for extra flavor yumm :)

Crust Free Quiche (Frittata)


Ingredients:
4 Eggs
1 1/2 Cups of milk
1 Stick of green onion 
1/4 Tsp of salt
1/8 Tsp of black pepper
3/4 Cup of ham
1 1/2 Cups of shredded cheese
1 Tbs of all purpose flour


1. Preheat oven to 325 degrees Fahrenheit
2. Chop the onions into 1/4 inch slices
3. In a large bowl, beat together 4 eggs, 1 1/2 cups of milk, chopped green onions, 1/4 tsp of salt and 1/8 tsp of pepper.
4. Stir 3/4 cups of ham into the egg mixture
5. In a small bowl, toss the cheese and flour together, add to egg mixture
6. Pour the egg mixture into a baking pan (I like to use my ceramic shallow dish)


 7.Bake for 40-45 minutes, poke the center of the quiche with a toothpick, if it comes out clean, it's ready.  Turn off the oven and let the dish sit for about 10 minutes.
8. Serve and enjoy! :)

Cranberry and Chocolate Chip Oatmeal Cookies

    

Ingredients:
1 Cup of butter, softened
1 Cup of packed brown sugar
1/2 Cup of white sugar
2 Eggs
2 Tsp vanilla extract
1/2 Tsp baking soda
1 1/4 Cups of all-purpose flour 
1 Tsp of salt
3 Cups of uncooked oatmeal oats
1 Cup of dried cranberries
2 Cups of semisweet chocolate chips


1. Preheat oven to 325 degrees Fahrenheit
2. In a large bowl, mix 1 cup of butter, 1 cup of packed brown sugar and 1/2 cup of white sugar until smooth.
3. Beat in the eggs, one at a time, into the mixure
4. Add 2 tsp of vanilla extract
5. Combine 1/2 tsp of baking soda, 1 tsp of salt and1 1/4 cups of flour
6. Stir in the above dry ingredients into the the large bowl
7. Mix in the 3 cups of uncooked oatmeal oats, 1 cup of dried cranberries and 2 cups of semisweet chocolate chips

8. Drop a spoonful of cookie dough onto your baking sheets.  (I like to line mine with foil, so it is easier to transfer the cookies later)
9. Bake for 12 in the preheated oven. 
10.  Let the cookies cool on the baking sheet for about 5 minutes and then serve and enjoy! :)

Stewed Pork with Fried Tofu

Ingredients:
1 pound of pork (the chunks of pork with the fat and skin, makes the dish juicier)
1 clove of garlic
5 slices of fresh ginger (1/4 inch thick)
1/2 cup of deep fried bean curd (mini deep fried tofu)


Seasoning:
1 1/2 cups of cooking rice wine
1 cup of water
3 tbs of soy sauce
2 tbs of sugar


1. Cut the pork into small bite sized pieces.
2. Peel the skin off the garlic.
3. Slice the garlic into 1/4 inch slices. 
4. Bring a pot of water to boil and throw in the pork pieces.  When the meat turns white, drain and set aside. (please note the pork is not fully cooked at this stage)
5. In a separate pot combine the 1 1/2 cups of cooking rice wine, 1 cup of water, 3 tbs of soy sauce, 2 tbs of sugar, 1 clove of garlic, 1/4 cup of ginger slices, 1/2 cup of deep fried bean curd and the chunks of pork, bring to a boil. (I like to use a clay pot because I feel like it brings out the flavors more, but any pot will work)
6. Cover the pot and let it simmer for 3 hours, stir occasionally and add a little bit of rice wine if the stock dries up, you can also use water if you don't have anymore rice wine. (my first batch I used all the rice wine I had left (1 1/2 cups), so I had to use water to keep the stock from drying up)
7. Serve and Enjoy! You can also add some cilantro for extra flavoring (I like to eat it with rice and let the rice soak up the juices...yumm)

Turkey Egg and Cheese Sandwich



Ingredients:
1 Egg
2 Slices of bread
2 Slices of cheese
2 Slices of turkey deli meat
3 Slices of cucumbers or pickles


Seasoning:
Ketchup
Mayonnaise 


1. Turn on the stove to high-medium heat and fry the egg sunny side up
2. Slice the pickle into 1/2 cm strips
3. Place the 2 slices of bread in the toaster
4. Mix the ketchup and mayonnaise together
5. Add the ketchup mayonnaise spread to both slices of toast
6. Place 1 slice of toast on your plate, add 1 piece of cheese, the fried egg, 2 slices of turkey, 3 slices of cucumber, 1 more cheese and the other piece of toast, to finish it off (I like to fold my ham in half so it tastes like there is more meat in the sandwich)
7. Cut the sandwich in half, serve and enjoy! (I like to have some extra cucumbers on the side..gotta eat your veggies...yumm)

Egg and Corn Soup

 Ingredients:
2 eggs
1 1/2 cups of frozen corn (you can also use canned corn)


Seasoning:
4 cups of water
1 tsp of salt (can add more or less depending on personal preference)
2tbs of corn starch
2 tbs of sesame oil
scallions
white pepper


1. Bring 3 cups of water to a boil
2. Add 1 1/2 cups of corn to the pot and bring to a boil
3. Add 1 tsp of salt to the pot
4. In a small bowl, mix 2 tbs of corn starch and 1 cup of water
5.  When the pot has come to a boil, pour in the corn starch mix
6. Beat 2 eggs, pour the beaten eggs into the pot while gently stirring the soup
7. Immediately turn off the stove, and add 2 tbs of sesame oil (by immediately turning off the stove it makes the eggs light and fluffy)
8. Serve and Enjoy! (I like to add scallions to my soup, it adds flavor and color. For a little more flavor I also like to add white pepper...yumm)

Oven Baked Chicken Drumsticks



Ingredients:
Chicken drumsticks (my drumsticks came in packets of 5, from Costco)

Seasoning:
5 tbs of soy sauce
3 tbs of pepper (you can add more or less depending on personal preference)
A pinch of salt


1. Put defrosted chicken drumsticks in a large bowl, add 5 tbs of soy sauce, 3 tbs of pepper and a pinch of salt.  Toss until the drumstick are completely covered in the seasoning
2. Cover and marinate in the refrigerator for  2 hours
3. Preheat oven to 350 degrees Fahrenheit
4. Place drumsticks on foil and bake for 35-40 minutes.  (If the drumsticks look to dry, you can mix some soy sauce and a little bit of water with some pepper and brush it on)
5. Poke the chicken with a toothpick, if clear chicken oil comes out, it's ready to eat.
6. Serve and enjoy! (I like to eat my chicken with brown rice..yum)

Sticky Rice with Pork



 Ingredients:
2 cups of sweet short grain rice (aka glutinous or sticky rice)
5-6 medium sized shitake mushrooms
5-6 shallots
1/3 cup of dried shrimp
1/2 cup of dried uncooked peanuts
1 pound of pork (I like to buy the ones with the pork fat + skin still on them, it taste juicier)

Seasoning:
2 tbs of cooking wine
2 tbs of soy sauce
1 tbs of salt
1 tbs of sugar
4 cups of water
Cilantro

For this recipe you need a steamer.  I use a Tatung Electric Steamer, all you have to do is add water push a button and it will pop up when ready.  But any steamer should work the same :)

1. Soak sweet rice in water overnight, or at least 3 hours.  Rinse rice and drain the water.  Put the rice into a bowl and add 4 cups of water.  Steam for 30 minutes.  Let it sit for another 5 minutes in the pot before removing. (If you are using a Tatung Electric Steamer, pour 1 cup of water on the outside and press the cook button)
2. Soak mushrooms, dried shrimp, peanuts in water. (best to soak them in separate bowls)
3.  When mushroom are soft and plump, squeeze out the water and cut into small 1/2 inch pieces.
4. Dice the shallots
5. Chop pork into bite-size pieces
6. Boil a pot of water, when the water boils throw in the pieces of pork.  When the pork turns white, drain the water and set aside.  (Please note the pork is not fully cooked at this stage)
7. Add a little oil  to the pan and stir fry the onions, mushrooms, dried shrimp and peanuts.
8. Add pork to the stir fry with 2tbs of cooking wine, 2 tbs of soy sauce, 1 tbs of sugar and 1 tbs of salt and let it simmer on high heat.  Keep cooking until the meat has turned brown and soaked in some of the soy sauce.  (note: if the stir fry is too dry add a little water)
9.  Add the cooked sticky rice to the stir fry and mix.
10. Put everything into a bowl and steam for another 30 minutes.  Let it sit for another 5 minutes in the pot before removing. (If you are using a Tatung Electric Steamer, pour 1 cup of water on the outside and press the cook button)
11. Serve and enjoy.  For extra flavor add a little cilantro to your bowl.
